Southwest Chicken

Chicken
Black olives, sliced
Green pepper
Salsa
Cheese
Brown rice

Chop up chicken into bit size pieces. Cook it in a large skillet.

Once the chicken is cooked, pour in an entire small jar of salsa
(organic,
hot, mild – whatever).

While you are waiting for the salsa to start boiling, slice green
pepper and
open a can of sliced black olives.

Once the salsa is boiling, pour in one and a half cups of brown quick
cooking rice and the veggies. Within five minutes the rice should be
done.

Sprinkle with cheese of choice.
