Quiche

Polenta crust – bring 2 cups chicken broth to boil, take off heat and whisk in 1 cup of polenta (cornmeal). Spray a flan dish with Pam and line with polenta (there will be some polenta left over for other use). Cook for about 30 mins at 350. The crust will become firm and pull away from the sides slightly.

Beat 3 eggs together add about 1/2 cup of ff milk and seasoning of choice. Mix in about 1/2 cup of shredded ff cheese.
Put a selection of veggies in the flan base (I used onion, broccoli & asparagus). Pour egg mixture evenly over veggies. Cook on 350 for 30 mins until set.

You may be able to cook the base and filling simultaneously, rather than separately as I did (I wanted to see how the crust would turn out). I will probably try that next time.
