Polenta Chips

Here’s how to do polenta chips….shhhh…don’t tell anyone – some say not Core. It’s really two servings of polenta…I divide into 4 baggies and they keep for a long time!

1/2 c cornmeal
2 c water
a little salt.

Microwave for 3 minutes. Whisk… microwave for 3 more minutes. Pour out onto 2 sprayed cookie sheets. Let cool a few minutes. Then SPRAY YOUR FINGERS with oil. Pat out polenta as thin as you can. Don’t worry about finger marks. I like to then put just a little season salt on top.

Put in 375 oven for 30 minutes….turn oven off..don’t peek! Leave in oven for about 90 minutes. Take out, break up and divide into 4 baggies. So nice to have something crunchy
