Polenta and Black Beans

3c water
1c cornmeal
1c water
1/2 tsp salt
1 15oz can black beans,rainsed and drained
1 14 1/2oz can diced tomatoes,undrained
1c bottled salsa
3/4c soy cheddar shredded

For polenta: in saucepan bring the 3c water to boil.mix the 1c cornmeal,1c water & salt in a small bowl. Stir cormeal mixture slowly into the boiling water. cook 5-10min until thicken,if to thick mix in a little water.

Meanwhile in a large skillet combine,bean,tomatoes & salsa.Bring mixture to boil and reduce heat. Simmer 10 mins.Stir 1/2 the cheese in to the polenta.Divide polenta in 4 bowl.top with bean mixture and sprinkle with remaining cheese.
Yellow cornmeal produces the best results.
