Baked Oatmeal

2 c. uncooked old-fashioned oats
1 1/2 tsp baking powder
1/2 tsp salt
1 C. FF skim milk
1/2 C. egg substitute OR two eggs
1/2 C. unsweetened applesauce
1/2 C. Splenda
1 tsp vanilla extract
1 or 2 tsp of cinnamon or apple pie spice

Preheat oven to 350*. Combine wet ingredients, add to dry ingredients. Bake in sprayed 8″ square pan for 35-45 minutes. Cut into 6 squares. Variations: substitute equal amount of canned pumpkin for applesauce; add 1 chopped banana; add 1 peeled, chopped apple; add 1 c. blueberries + 1 tsp. lemon zest
