Baked Fruit Crisp

2 apples
2 nectarines (or peaches)
1 cup dry oatmeal
1/2-1 t cinnamon
3 T sugar-free jelly
2 t wheat flour
1 t canola oil
1/4 c splenda

Peel and slice the fruit thin. Place in cassarole or 8″ square glass baking dish that has been sprayed with veg spray.

In bowl mix the rest of the ingredients with a fork, add a sprinkle of water if the mix seems too dry. Top the fruit with the oatmeal mix. Cover with foil, bake at 400 for 20 min. Remove foil and bake another 15-20 min more until slightly bubbly.

I use this basic recipe and substitute any fruit, even frozen.

Homemade applesauce is awesome. Just peel and cut up the apples, add a little water and simmer until soft. Keep adding water if it needs it. Add splenda and cinnamon to taste. You may need a sqirt of lemon just to keep it from browning, too. Yum.
