Almond Joy Pudding

Almond Joy Pudding 4 servings Core or 3 points

2 cups fat free milk
1 box Jell-o sugar free/fat free Chocolate Fudge Pudding mix
1-1/2 teaspoon coconut extract
1 cup uncooked oatmeal

Mix milk & Jell-O together 2 minutes until thick
Add coconut extract and oatmeal
Mix well
Refrigerate 1 hour
(I also add a little almond extract)

I like to mix raw oatmeal with yogurt and fruit, let sit overnight in refrigerator. Have for breakfast in the am. It expands and makes a lot. I use about a cup of yogurt, a cup of frozen berries(or whatever fruit you choose it doesn’t have to be frozen) and 1/2 cup raw oatmeal. It’s one of my favorite breakfasts or snacks.
