Baked Oatmeal with Apples and Raisins

Points: 3
Serves: 6 (199 Calories 3g Fat 4g Fiber)

2 cups quick cooking oats
1-1/2 tsp baking powder
1/4 salt
1 cup skim milk
2 eggs
1/2 cup unsweetened applesauce
1/4 cup Splenda
1/4 cup raisins or dried cranberries
1 tsp vanilla
1 tsp cinnamon
1 cup diced apple (1 small), optional

Preheat oven to 350F. In a large bowl combine the oatmeal, baking powder and salt. Mix in remaining ingredients; stir and pour into an 8″ square cake pan. Bake for 45 minutes. I usually freeze these….cut into pieces.
You can bake this in 12 muffin tins….at 325F for 20 to 30 minutes or until done.
Variations:
Cranberry — 1/4 c dried cranberries for raisins; 1/2 tsp almond extract 1/2 tsp vanilla and 1 tsp orange zest for cinnamon
If You use raisins or dried cranberries….you will have to count the points.
