Chicken and Salsa Pasta

*This recipe is adapted from Kraft’s Fiesta Chicken Pasta*

2 cups Whole Wheat rotini pasta, uncooked
1 Tbsp.  oil
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 cups  chopped red peppers (about 2 medium)–I used some frozen ones from Trader Joes, and just added them with the salsa to heat through
1 small-ish jar of  Salsa–I, again, used something from Trader Joes (Love that place!)-the Roasted Tomato salsa
1/2 cup shredded Cheddar Cheese

Cook pasta as directed on package.

While the pasta is cooking, heat oil in large skillet on medium-high heat. Add chicken and cook through.

Drain pasta, and add it back to the cooking pot.Add cooked chicken, salsa and peppers and stir until peppers are heated through. Stir in cheese until melted.
