Peanut Chicken

1 lb. chicken breast boneless skinless
2 Tbsp reduced fat peanut butter
1 tsp low sodium soy sauce
2 Tbsp water
1 tsp sesame seeds

Preheat oven to 350. Coat a baking dish with olive oil cooking spray.
Season
chicken lightly with salt & pepper and place in baking dish. Set aside.

Combine peanut butter, soy sauce and water and stir until smooth and
well
mixed (can microwave for 30 seconds on high). Spoon sauce mixture over
chicken and sprinkle with sesame seeds.

Bake for 20-30 minutes or until chicken is cooked through.

I also sprinkled a few crushed red pepper flakes on top.
