Beef Nachos


1/2 pound lean ground beef                                     2 tsp chili powder
1 tsp ground cumin                                                 1/3 cup(s) salsa
1/2 tsp table salt                                                     1/4 tsp black pepper
8 oz baked low-fat tortilla chips, about 72 chips
1/2 cup(s) shredded reduced-fat Mexican cheese
2 tbsp canned jalapeno peppers, sliced


1.        Preheat oven to 400ºF.

2.        Set a large nonstick skillet over medium-high heat. When pan is hot, add beef and cook until completely browned, breaking up the meat as it cooks, about 3 to 5 minutes; drain off any fat and return pan to heat. Add chili powder, cumin, salt and pepper; stir to coat beef. Stir in salsa and heat through; remove from heat.

3.        Arrange chips in a shallow ovenproof dish; spoon beef mixture over chips and sprinkle with cheese and jalapeño peppers. Bake until cheese melts, about 5 minutes. Yields about 12 topped chips per serving.
